Thanksgiving dinner doesn’t have be for 10 – 20 people. Even if you have a small family, that doesn’t mean you can’t have a wonderful Thanksgiving meal with just you and your spouse.

This was our Thanksgiving dinner, just me and my hubby. Turkey, stuffing, green beans, crescent rolls, and apple butter. It was really good, but not as good as my Granny Roy’s dinner last weekend (although I was certainly proud of it). We’re traveling again this weekend to visit my husband’s family. I am really looking forward to this weekend. We haven’t been to visit them since last Christmas. I’m ready for black Friday shopping, because that is what we do, we shop, we eat, and we enjoy our short time together before we have to leave again. It makes me thankful for God’s grace and love that He has for us that we may love each other, even when we’re so far away.

Turkey for Two – Slow Cooker

1 whole boneless turkey breast 3-4 lbs.

1 cup chicken broth

2 tbsp unsalted butter

1/2 tsp thyme

1/2 tsp oregano

sea salt

fresh cracked pepper


Set slow cooker on low. Pat turkey dry with paper towels and place in slow cooker. Pour chicken broth over turkey making sure it doesn’t cover the turkey. You only need enough to keep the turkey moist. Sprinkle thyme, oregano, salt and pepper over turkey and cut butter in small pieces and place on top. Cover and cook on low for 3 1/2 hours.

When you have 15 minutes left in cooking everything else. Remove turkey from slow cooker, transfer to aluminum foil and wrap up. Let set for 8 – 10 minutes to let juices set. Cut and place turkey on platter and serve. If you find your turkey a little dry, spoon chicken broth over turkey and everyone will think you made a perfectly moist turkey.
