Tomorrow is Thanksgiving and I’ve got my turkey defrosting in the refrigerator. If you don’t, have no fear. There’s always an option to buy fresh or buy a turkey breast and defrost it in water. Just make sure you change the water every 30 minutes. Defrosting a big bird is not an option at this time.

This year we’re staying home. We traveled to visit my family last weekend and had Thanksgiving a bit early. My husband, Callen, and I are having a lazy Thanksgiving day tomorrow. I’ll be cooking my turkey in the slow cooker so I don’t have to worry about getting up early and messing with a turkey when I have a 3 month old demanding more of my attention.

Turkey for Two – Slow Cooker

Ingredients

1 whole boneless turkey breast 3-4 lbs.

1 cup chicken broth

2 tbsp unsalted butter

1/2 tsp thyme

1/2 tsp oregano

sea salt

fresh cracked pepper

Directions

Set slow cooker on low. Pat turkey dry with paper towels and place in slow cooker. Pour chicken broth over turkey making sure it doesn’t cover the turkey. You only need enough to keep the turkey moist. Sprinkle thyme, oregano, salt and pepper over turkey and cut butter in small pieces and place on top. Cover and cook on low for 3 1/2 hours.

When you have 15 minutes left in cooking everything else. Remove turkey from slow cooker, transfer to aluminum foil and wrap up. Let set for 8 – 10 minutes to let juices set. Cut and place turkey on platter and serve. If you find your turkey a little dry, spoon chicken broth over turkey and everyone will think you made a perfectly moist turkey.
