We’re celebrating Thanksgiving this weekend with my family back home and then celebrating again next weekend with my hubby’s family.
I really can’t believe that its Thanksgiving time already. I’ve already been Christmas shopping but we will be going out on Black Friday since I’ll be with my sister-in-law and mother-in-law. I never went shopping on Black Friday until I married into the Camblin family and they had to drag me out with them. Not literally, I went freely but on one condition, we go around lunch so it’s not so crowded. I hate being in the middle of lots of people, bumping into me not caring, just as long as they got that sweater on sale. To me, no item is worth fighting or throwing elbows for just because its 50% off. Not that my sister and mother-in-law does that, but I don’t want to be in the way of someone who does.
I think I’ll be baking some of these Cookie-n-Cream Brownies this weekend. There’s 20 of us in the Roy Famliy that get together and there are always tons of food. My grandma is the best! I don’t even know how long she stays in the kitchen preparing everything. We do bring dishes but she does most of the work. Granny Roy you’re the best.
If your not into the pumpkin pie or the pumpkin roll like me, then these are great to take to a Thanksgiving dinner. Who doesn’t love some Oreo’s on top of brownies? These are so easy, I used Duncan Hines brownie mix and then made the topping. If you want to go that extra mile and make your brownies from scratch, you should try my friend’s Dark Chocolate Brownies over at Little Pink Apron.

1 box Duncan Hines Brownie Mix
1/4 cup Water
1/2 cup Vegetable Oil
4 oz. cream cheese, at room temperature
2 tbsp softened butter
1 cup powdered sugar
1/8 tsp vanilla extract
1 tbsp milk
10 Oreo Cookies, crushed
Preheat oven to 350. Line a 9 x 13 pan with parchment paper, creasing at the corners leaving enough paper over the edge so you can pull the brownies out without any mess. Mix together brownie mix, eggs, water, and oil until well blended and bake for 25 – 30 minutes depending on your oven. When brownies are done, let cool in pan for 5-7 minutes. Carefully pull brownies out of pan and setting on cooling rack to cool completely.
While the brownies are cooling, whisk cream cheese and butter until smooth. Add powdered sugar little by little while whisking on low. Add in vanilla and milk and mix until well blended. Crush Oreos in a zip lock bag, careful to not over crush, you want it chunky. Spread cream cheese mixture over cooled brownies, top with crushed Oreos.
