My friend Katie is getting married in just a few short weeks. They got engaged last summer, and now it’s down to the last few weeks. I am very excited for Katie and Tyler. I know that December 17th will come soon but not soon enough for them. We had her shower last weekend, everything looked so pretty. Kim and Heather did great on decorations and the food was delicious.

We had everyone to bring their favorite recipes for Katie to start her recipe book. It’s nice for newlyweds to have great recipes from family and friends to go to when learning how to cook. I’m hoping Katie will share her recipes with me. I’m always looking for new recipes to try out.

I made the desserts. New York cheesecake with strawberries with chocolate drizzle and chocolate cupcakes with strawberry buttercream.

Who doesn’t love cheesecake and cupcakes! There was a few cupcakes left but the cheesecake was all gone. My hubby was a little sad that he didn’t get a piece. This was my best cheesecake I had ever made…yes… it was that good! Sorry to tease you but the cheesecake recipe will be in another post, I promise.

These cupcakes were delicious!!

I used Duncan Hines Devil Foods cake for the cupcakes and the icing was really easy to make. I used My Baking Addiction recipe, I didn’t put as much icing on my cupcakes and I had tons left over. (Note: I cut the original recipe in half so you don’t have to.) I added a little more strawberry pureed to give it more a strawberry taste. These cupcakes are so good. Nothing special about the cupcake part. Duncan Hines make such great cupcakes, when in a pinch, why try to make it from scratch?

This Strawberry Buttercream will also be great on a cake as well.

Strawberry Buttercream

1 1/2 sticks unsalted butter, softened

pinch of fine grain sea salt

1 1/2 tsp vanilla extract

1 pound confectioners’ sugar, sifted

4 ounces strawberries, pureed

3-5 tablespoons heavy cream


Fit stand mixer with paddle attachment, you can also use hand mixer if you don’t have a stand mixer. Cream butter on medium speed until fluffy. Turn to low and add confectioner’s sugar slowly until well blended.

Add salt, vanilla, 3 tablespoons of heavy cream and strawberry pureed. Blend on low speed until moistened. Add additional tablespoons of heavy cream until you reach the desired consistency. Beat at high speed until frosting is smooth and fluffy.

Pipe frosting onto cooled cupcakes or spread on cooled cake.
